How to make it

  1. Combine prawns with sweet potato flour, salt and pepper. Lightly deep fry until crispy. Set aside to drain excess oil
  2. Heat the wok and add in oil, butter, curry leaves and salted egg yolk paste
  3. Lightly fry the sauce until foamy. Add in prawns then toss and coat evenly. Ready to serve
