Stir-fried Eggplant with Chili Garlic Sauce

Eggplant(s) 400 g [cut into strips]
Minced pork 150 g [or chicken]


Premium Oyster Sauce 1 tbsp
Oil 2 tsp
Corn starch 1 tsp
Chili Garlic Sauce 3 1/2 tbsp
Corn starch 1 tsp
Premium Oyster Sauce 1 tsp
Water 3 tbsp

  1. Mix pork with marinade.
  2. Blanch eggplant in boiling water until tender. Drain.
  3. Stir-fry pork in 2 tbsp oil until done. Stir in sauce mix, eggplant and heat through.
