Smoked Duck Eggs in Oyster Sauce

Duck Egg (s) 6 pcs
Premium Oyster Sauce 5 tbsp
Pure sesame oil 2 tbsp
Tea leaves 1 1/2 tbsp
Slab sugar 25 g [chopped]
Plain flour 2 tbsp


Premium Oyster Sauce 200 g
Water 750 ml
Sugar 2 tbsp

  1. Bring marinade to the boil until sugar dissolves. Let cool.
  2. Put duck eggs into cold water.  Bring to the boil and cook for 3 minutes.
  3. Drain and rinse eggs in iced water. Remove shells. Soak in cooled marinade for a few hours. Take out.
  4. Line the bottom of a wok with aluminium foil. Arrange smoking ingredients evenly on the aluminium foil. Place a steaming rack and bamboo mat on top.
  5. Arrange the eggs on the bamboo mat. Cover and cook over high heat for 5 minutes until evenly coloured.
  6. Take out and coat with Sesame Oil. Serve with Oyster Sauce.

    Remark: The smoking ingredients are tea leaves, chopped slab sugar and flour.
