Chicken meat 350 g [cut into pieces]
Rice 1 cup [soaked in water for 15 minutes]
Ginger (s) 4 slices [shredded]
Water 5 L
Green onion(s) [diced, for topping]


XO Sauce(Regular) 4 tbsp
Salt 1 tsp
Corn starch 1 tsp
Salt and Pepper to taste

  1. Mix chicken and ginger with marinade. 
  2. Boil water.  Add chicken, ginger and rice.  Cook on low heat for 1 1/2 hours to make congee.
  3. Stir in seasoning mix.  Sprinkle with diced green onion.
