Premium Vegetarian Lettuce Cups

Ingredients

Asparagus 120 g [diced finely]
Carrot (s) 90 g [diced finely]
Button Mushroom (s) 90 g [canned, diced finely]
Pine Nuts 25 g
Iceberg lettuce [for serving]


Marinade

Premium Light Soy Sauce 2 1/2 tbsp
Water 1 tbsp
Corn starch 1 tsp
Sugar 1/2 tsp


Directions
  1. Stir-fry pine nuts in 2 tbsp oil on low heat until golden yellow.  Take out and set aside.
  2. Use remaining oil to stir-fry asparagus and carrot.  Stir in button mushrooms, sauce mix and heat through.  Turn off heat.  Stir in pine nuts.  Wrap filling with lettuce leaves and serve.
